What does float mean?

Float means your foot can pivot a few degrees on the pedal. The amount of float is usually indicated by the cleat type. For Look products, black indicates no float, gray may be about 4 degrees of float and red generally is about 6 to 8 degrees. Float allows you to vary how much your toes point toward or away from the direction the bike is going. Float is allowed by the geometry of the cleat, i.e., the cutouts on the trailing edge of the cleat allow a little play where they attach to the pedal.

what is the difference between " one size float, and " zero degrees float" ?

These cleats come in three different float configurations: zero degrees - no movement in the pedal; 4.5 degrees; and 9.0 degrees. 4.5 and 9.0 allow your foot to rotate slightly before coming out of the pedal.
