Good book to have on hand for cheese making information

The recipes don't state fully the quantity of ingredients. It says to use culture but not what culture. There are numerous different cultures and different cheeses require different culture. This is a " read between the lines book" meaning that often have to quess or speculate what you should do with a particular recipe. You are much better off doing a Google search for the recipe that you're looking for. Most with be more complete than what this book offers.
