Q: Do you know which cultures are in this kit?

Our heirloom (reusable) water kefir grains are included in this kit.

Q: I understand that this is water kefir. I was wondering if we could make this by dairy as well? Or is it just water?

From my understanding, you cannot use water kefir grains to make dairy kefir. I believe it might be possible to go the other way, use dairy grains to make water kefir, but not water kefir grains for dairy kefir. If you did try to do this, it is possible you would kill the grains (perhaps not the first batch but eventually).
