How many pages are in each book?

There are 60 sheets which can be written on both sides, so: 60 sheets 120 pages.

What is the size of the page it has been removed from the binder?

There is very little that is left on binder, I would say 2cm at the very most is all that is left behind when the page has been removed, however I have found that the page does come away from the binder very easily, sometime while you are writing.

How is the paper for fountain pen use?( ie show through, bleed through)

These notebooks are actually made by Clairefontaine, which makes them a bit of a bargain. They work really well with even the wettest fountain pens, with no feathering or bleed through.
