how do I operate the Hold function?

The Hold function keeps the last measured values on the display even when there is no more transmission signal present from the attached radio device. The display values will automatically start to update when a new transmit signal is present at the input of the device.

does it have the latest firmware 2.07 ?

I purchased mine in 2017 and running v5.0. I only use this meter for /p and /m to check for obvious antenna faults which as a guide works ok. It appears the manufacturer uses an odd firmware numbering system where the lower 2.07 is later than v5.0 As some time has passed since my purchase many other low cost meters have entered the arena, imo would be worth your looking at some of those options.

Do the other connectors pictured in the advert on Amazon include the two connectors ? If not can i buy them from the same supplier ?
