Spice it up!
I have been eating the Harmony Valley Vegetarian Sausage Mix for two months now, and I can highly recommend it. A few practical notes:First, if you want more of a true 'sausage' taste, add some spices. I put the sausage mix into a bowl and then add two tablespoons or so of Italian Herb seasoning, then mix it well before adding water.Second: The instructions call for one and one-fourth cups of cold water. I use one and a half cups, which makes the sausage more moist. I do cook mine stove-top, in a pan, over medium-high heat, for about 2 minutes per side (until brown). It does not require much cooking. I make 10-12 sausage patties out of each package.Finally, as a insulin-dependent diabetic, this sausage does not affect my blood sugar. If I have read the package correctly, there are approximately 21 'net' carbs per total package, so divide said number by the number of patties you create.Here are the ingrediants listed on the Harmony Valley website:Soy flour, soy protein concentrate, vegetable oil (soybean and/or palm), wheat gluten, isolated soy protein, natural flavor, methylcellulose, salt, extract of malted barley. Contains 2% or less of spices, yeast extract, and beet powder.I am not sure what methycellulose is (some type of plant-based product), but it is actually sold on Amazon, and reviewers say they use it to make a glue! Other websites say that it is used to treat constipation. Anyway, it is the reason that you must use cold water for the mix (it only dissolves in cold water).Anyway, a very good, easy to use vegetarian sausage mix. I also like the hamburger mix, but I give the edge to the sausage, and so I now purchase only it.

good replacement
I am meat eater not a vegatarian so for me to recommend this is saying something.I do not eat pork and eat a lot of turkey sausage but lately have gotten to the point were I am concerned about all the by products in the sausage so I have been on quest to find a better alternative.So I saw all the reviews here at Amazon and other sites about this product so I thought I would give a try and I am glad I did,no it does not taste like sausage per say but the texture is there and if you work with it to make it to your taste you can get a replacement I think anybody looking for a healhier option can live with.I add a tsp of a sausage mix you can also buy at Amazon with maple flavoring in it and then I add a little hot pepper spice to the mix and then I adjust the amount of liquid to the mix to my taste. Then I spray a little olive oil in the pan and crisp up on both sides,Even my picky 13 year old some eats this and has not asked for the regular sausage but I still give him some natural chicken now and then and he seems happy about this arragement.What is also great is you mix just the amount you want at a time and store the rest in the pantry without it taking up space in the freezer.The flavor even without adjustment to the mix is still a better flavor then anything morningstar can offer!So give this a try if you are looking for a healthy option or just want something different you to could up little surprised about how good this sausage mix can be and is.

This does not really taste like sausage to me
This does not really taste like sausage to me, but it is really good for cooking. The texture makes it perfect for meatballs, I have made very small ones and large ones for all kinds of uses. Our favorite though is using this for meat loaf, I exchange some of the water for tomato sauce and add mixed frozen veggies cover in BBQ sauce and it is wonderful!My Meat Loafin a large bowl blend1/4 solid oil crisco shortening or coconut any solid kind use a fork and blend it into the dry mix until evenly distributed1 small egg1/2 cup tomato sauce or paste1/2 tsp better then Bullion1/2 tsp liquid smoke1 tsp steak sauce1/4 tsp soy sauce1/4 tsp garlic powder1/2 cup BBQ sauce your favorite kind honey hickory is my fav.1 small onion fried4 mushrooms fried1 cup mixed veggies (I use frozen peas, cubed carrot and green bean mix)Mix shortening in lg bowl into dry mix with a fork until evenly distributed.In separate small bowl combine 1/4 cup tomato paste/water/or sauce in any proportion you like.Add all liquid (cold) to measuring cup and add egg if it needs more to be full at water to the top add that cup to tomato and whisk.Add fried onions, mushrooms and mixed veggies stir and pack into a single loaf pan.Cook 400 for 50 mins add sweet BBQ sauce to top 15 mins before taking it out of oven.Picture is left over slice it goes fast!:-)

Enjoying creative cooking with this.
Good basis for many dishes and can take on whatever flavors and seasonings you use to enhance the mix. It's dry, you add seasoning and water, let it sit for a few minutes to rehydrate, then add other condiments like onions, barbecue sauce, soy sauce whatever you prefer and then can be used in so many different ways.I made burgers the other day and they held together well and were tasty. Today I used it as crumbles like you would ground beef to flavor my pasta with arrabiata sauce. It brought a rich meaty flavor to the dish without tasting like meat. I bet if you add mushrooms it would make it even richer.This by no means is a meat substitute for meat eaters but for vegetarians or vegans who want a little more substance in their meals without going the tofu route this is helpful for varieties sake.

Probably use it again
Not a bad source of protein via the net/delivery when Amzn Fresh doesn't deliver to your zip. But don't expect crumbles like burger used for stroganoff. That becomes a slurry. I expect to have a better result using it as patties since I could tell by how the stuff formed browned against the pan bottom.The taste is good if you brown it. But not remarkable. Think of this as a vegetable protein additive.
