Picky Pasta Eater Approved!
So pasta is my favorite food on the planet. Spaghetti, taco pasta, Alfredo, Mac and cheese... You name it, I love it. So as you can imagine, all this pasta loving came with some extra pounds around the waistline.I was looking for a lower calorie alternative (instead of just eating less of the normal stuff, because what's the fun in that?), and I tried a few other kinds that just didn't hit the same as traditional pasta. Til I tried this pasta. The rotini and penne are amazing, I can't tell the difference between this and traditional pasta when mixed with sauce. I'm on my 3rd or 4th order, it's that good.I will say I wasn't a huge fan of the spaghetti though. But I think the noodles were just a little too thin for my liking. They weren't horrible, I just prefer the rotini or penne instead.

You’ve got to try this low carb pastas!
As a picky Italian who’s tried other low carb pastas, this is pretty darn close to the real thing. It smells and tastes like regular pasta. I’m sure I could fool some family members. I make a garlic and oil sauce with crushed red pepper and topped with freshly grated parm or pecorino Romano cheese. To die for! I tested my blood sugar before and 2 hrs later and it actually was lower than the previous reading even though I’m not diabetic. I don’t care if it takes a bit more time to cook. Usually about 14-15 mins because I like my pasta al dente. The texture is on point. I’ve made mac n cheese with the elbow pasta and it was also delicious. I’ve made pasta with peas and bacon with the penne. All of them came out great.

Perfect !
Perfect ! Taste is just like the regular rotini . I just used one box so far . And it was to make pasta salad . I got raves about the salad , and friends were shocked that it was low carb pasta . Price is higher than I would prefer , but the taste is everything . BTW , mine cooked in less time than directions said , about 10 minutes . So, keep taste testing . I rinsed in cold water after cooking , for my salad . I’m looking forward to having some with a light tomato or Alfredo sauce . I highly recommend . Enjoy a pasta dinner ,,even on your healthy low carb diet .

Does it truly have 24 Grams of fiber PER SERVING?
I do question the fiber content and whether it truly gives the RDA. I am prediabetic and love pasta, but having 2 servings per day should put me at nearly 2 times what is recommended to maintain healthy digestion and regularity. I'm just not seeing it. 3rd party testing? Can General Mills give me assurance that their claim is accurate. If I took 48 grams of fiber in either a supplement or some cereals. there's no question. Fiber is also important to keep glucose levels at normal and prevent rises and falls from high glycemic foods.

Finally! A decent low carb pasta!
I have tried several low carb and keto pasta substitutes over the years, but this is the first one that I enjoyed eating! Some lower carb pastas only reduce carbs by a few grams, so I’m not including those, but if you are looking for a pasta that significantly reduces carbs, this is the one I will be buying. Texture is firmer than regular pasta, so I cooked it longer, but that is the only real drawback, if you can call it that. It wouldn’t be great for really strict keto, but for a pasta dinner once in a while, this is fantastic!

Taste and texture of regular pasta
I succeeded on Keto, now I'm just watching my carbs. I missed pasta. This pasta is great. You can't taste the difference between Carbe Diem and regular pasta. The trick is in the fiber. It's NOT gluten free and I wouldn't consider it Keto, but it has half of the net carbs of regular pasta. Who needs the extra carbs and if you are low carb, you know it's tough getting enough fiber. After trying the penne, I bought the fettuccini. I'm having that tonight.

Great low cal, high protein and fiber pasta!
When you're on a calorie deficit diet, this pasta is a life saver for staying on track. The high fiber and high protein help with my macronutrient goals. IMO the cost is worth the health savings. The texture is exactly like regular pasta but just takes longer to cook. It doesn't fall apart like pea based pastas and doesn't taste bad like other pasta alternatives.

Terrifically toothsome lower carb pasta!
I am moderately impressed with Carbe Diem pasta. It has the shape and a much better mouth feel than shirataki, hearts of palm, and perhaps even edamame pasta alternatives, which makes it more appealing in the first place. But there are some significant differences between the Carbe Diem pasta, and other standard pastas. Price is the first thing...Carbe Diem is definitely more expensive than regular pasta, but, if I want to indulge in a pasta dish, I find the price completely acceptable. I can't seem to get the cooking time down yet, and while I cook Carbe Diem pasta in excess of 16 minutes, I find that it is still pretty chewy. Not a problem for me, but there it is. Lots of fiber with this pasta, which I personally find tends to produce a significant amount of bloating and gas. Again, this is pretty acceptable because, you know, PASTA, and I don't eat it very often! It also seems to me that the sauces with which I cover my pasta kind of go to the bottom of a plate, or bowl, thus requiring a good mix occasionally to incorporate everything. I found the Carbe Diem pasta very filling and satisfying with the chewiness an actual bonus, as it requires more mindful eating. I like it very much and plan to try the other varieties for different dishes.
